About Moi
My Name is Brittany, and I'm 23yrs old. I was diagnosed with Lupus when I was 15, and then diagnosed with RA, when I was 18. I also got married when I was 18, and I'm enjoying my happily ever after with my hubby! When I got married, I was slim and trim...But not for long. After getting married, I started to gain a LOT of weight! In 1yr, I gained 50lbs! Finally, I went to the Doctor, where I discovered I have low thyroid. After being put on medicine, my weight gain slowed down, although over the next 3yrs, I gained an additional 26lbs. When I was 20yrs old, I got yet another diagnoses of Poly Cystic Ovarian Syndrome. That's 4 diagnoses in a 5yr period, if you lost count. They all effect my weight, in one way or another. Add on top of that, my love affair with food, and every 1 of those 76lbs gained was accounted for. Being 76lbs over weight is unhealthy for anyone, but it was especially unhealthy for me, and my health issues. Since starting this blog, in Jan-2010, I have lost 40lbs! I'm a new, slimmer, and healthier me! Before losing weight, I was told I needed knee replacements. Losing weight was the ONLY tool I had to help me hold off on that life changing surgery. Since losing 40lbs, my knees have never felt better! My husband and I are also trying to start a family, but my PCOS was not going to make it as easy as 1,2,3, as I didn't have periods on my own. My doctor had told me if I wanted a baby, I HAD to lose weight. Since losing 40lbs, I've had regular cycles for the first time in my life! Which is very important when trying to have a baby ;) This journey of mine is more than me simply wanting to wear skinny jeans. It has been a quest to becoming :Deliciously Healthy, so ALL of my dreams can come true! I'm almost half way there! With each new day, I get closer and closer to my goal of 120lbs, and becoming :Deliciously Healthy!

I Got My Cooking/Baking Mojo Back!

This past week, I've had nothing but one recipe disaster after the other.
It was super frustrating, and I started to wonder if I should get my butt out of the kitchen. Aside from driving me crazy (and broke), this problem was rather inconvenient. I have a hungry husband to feed!

But I didn't give up. I tried one recipe after the other.
Finally, I got my mojo back!

We are really excited about this, here at our house.
We have the yummy aroma of a good home cooked meal, filling our house again.

This meatloaf recipe from Good Housekeeping,
is what got me out of my cooking funk.
It was tasty!(it tasted better then it looks. I promise ;)

Then tonight I made these heavenly
Doughnut Muffins:I got the recipe from one of my favorite blogs,
Slim Shoppin'

She is awesome. Deliciously. Awesome.
I loved these, and I think it was the easiest muffin recipe I've ever made.
I tried linking you to the recipe, but it didn't work. Here's the recipe I got off her site:

1 cup all purpose flour
¾ cup whole wheat flour
¼ cup flax seed, ground
½ cup vanilla yogurt (I used light)
½ cup sugar
¼ cup canola oil
1 egg
½ tsp. salt
1 ½ tsp. baking powder
¾ cup skim milk
3 tablespoons chocolate chips

Just mix everything together until it’s combined. Try not to over stir.

Spray a muffin pan with non-stick cooking spray, and bake at 350 for 12-14 minutes or until a toothpick comes out clean. Sprinkle muffins with cinnamon and sugar, before baking.

Calories for each muffin: 175 calories, 6.5 grams of fat 25 carbs and 1.5 grams of fiber.


It feels nice to cook up a deliciously healthy storm again!

Now I'm in the cooking and baking mood!
I think fall does that to you. Does it not?

Oh my oh my! Good thing I just ate my 'yummy' Atkins breakfast bar....neither one of my girls enjoy cooking or baking. I always have- well, at least baking. I have started my lists for the holidays (I know- I'm a planner) and the fruitcakes will be made soon. We actually like them and my sister works with a man who has had a really sad life and loves my fruitcake so I bake a couple for him. Ironically, I don't have a sweet tooth so I can resist- now don't have any salty chips or dips around me.

Keep cooking! I love making mini-meatloves in my muffin tins. It's great for portion control. I like putting salsa on top as they cook.
