About Moi
My Name is Brittany, and I'm 23yrs old. I was diagnosed with Lupus when I was 15, and then diagnosed with RA, when I was 18. I also got married when I was 18, and I'm enjoying my happily ever after with my hubby! When I got married, I was slim and trim...But not for long. After getting married, I started to gain a LOT of weight! In 1yr, I gained 50lbs! Finally, I went to the Doctor, where I discovered I have low thyroid. After being put on medicine, my weight gain slowed down, although over the next 3yrs, I gained an additional 26lbs. When I was 20yrs old, I got yet another diagnoses of Poly Cystic Ovarian Syndrome. That's 4 diagnoses in a 5yr period, if you lost count. They all effect my weight, in one way or another. Add on top of that, my love affair with food, and every 1 of those 76lbs gained was accounted for. Being 76lbs over weight is unhealthy for anyone, but it was especially unhealthy for me, and my health issues. Since starting this blog, in Jan-2010, I have lost 40lbs! I'm a new, slimmer, and healthier me! Before losing weight, I was told I needed knee replacements. Losing weight was the ONLY tool I had to help me hold off on that life changing surgery. Since losing 40lbs, my knees have never felt better! My husband and I are also trying to start a family, but my PCOS was not going to make it as easy as 1,2,3, as I didn't have periods on my own. My doctor had told me if I wanted a baby, I HAD to lose weight. Since losing 40lbs, I've had regular cycles for the first time in my life! Which is very important when trying to have a baby ;) This journey of mine is more than me simply wanting to wear skinny jeans. It has been a quest to becoming :Deliciously Healthy, so ALL of my dreams can come true! I'm almost half way there! With each new day, I get closer and closer to my goal of 120lbs, and becoming :Deliciously Healthy!

A Random Post, From Yours Truly...

*This is a picture my husband quickly took of me. He called my name, and snap! The picture was taken. Back when I was 206, that kind of picture meant instant deletion. There was no time for me to try and hide my double chin, stand up straight, get my hair just right, or try to turn my head a certain way to make me look 10 pounds lighter.
That kind of photo always came out horrible, and depressing.

I love that I have gotten to the point where I feel healthy and beautiful, inside and out. I love that I hardly ever erase a picture of myself (no matter how skinny I get, there is always going to be such a thing as a bad angle, lol). I can embrace all of
life's moments
, without worrying about whether or not I look fat.

*I wish I had some new recipes for you, but these past few days I've had nothing but recipe disasters!!
Total and complete, epic fails!
Don't you hate that?

This is supposed to be Chocomole. Pudding made with avocado...With cooking healthy, it's either a total hit, or a total miss!

Good thing my old favorites never let me down.

English Muffin Pizzas

*I have been doing pretty darn good with my water intake, if I don't say so myself. My water bottle is like my purse; It goes with me everywhere.
*This morning's weigh in had me at 165
for a 0 pound loss this week.
The funny thing, is that I had felt pretty skinny these past few days.
Today I feel bloated. Hmm...
Better luck next week!

Hopefully by Thursday, I'll have some better luck in the kitchen, and I'll have some yummy recipes to share with you!

Yeah, I'd say no. I've seen it on a lot of blogs. It's either they're crazy, or I made it wrong, lol!

You can try out my vegetarian chocolate mousse on my blog, it's pretty darn good...and has avocados!!

I've made the black bean brownies and they actually are tasty, but some recipes with substitutions are BAADDD. I had an early dinner today- like 4ish- that was so good but higher in fat than most people like- it was flattened chicken breasts rolled up with a little gruyere cheese, sun dried tomatoes in olive oil and fresh chopped basil YUM! I made 3 so will have one tomorrow and give away the third. I served it with a nice green salad and now the kitchen is closed.

So what is this new craze with avacado and dessert. I have recipe book that has avacado ice cream and avacado jello..... I like all those things seperate but haven't been brave enought to try them yet (=

So does your english muffin pizza have eggs on them? I couldn't tell from the photo.

I put low-fat cheddar cheese, and low-fat mozzarella, onion and pineapple! And it was good! ;D

I know what you mean about pictures. I was just thinking there are only a few handful of pictures of me over the last 20 years because I hated being in them! My sister just took pics over the weekend and even though I'd down almost 30 pounds, I still wanted to delete them!

You look awesome! I am so proud of you!!
