My Name is Brittany, and I'm 23yrs old. I was diagnosed with Lupus when I was 15, and then diagnosed with RA, when I was 18. I also got married when I was 18, and I'm enjoying my happily ever after with my hubby! When I got married, I was slim and trim...But not for long. After getting married, I started to gain a LOT of weight! In 1yr, I gained 50lbs! Finally, I went to the Doctor, where I discovered I have low thyroid. After being put on medicine, my weight gain slowed down, although over the next 3yrs, I gained an additional 26lbs. When I was 20yrs old, I got yet another diagnoses of Poly Cystic Ovarian Syndrome. That's 4 diagnoses in a 5yr period, if you lost count. They all effect my weight, in one way or another. Add on top of that, my love affair with food, and every 1 of those 76lbs gained was accounted for. Being 76lbs over weight is unhealthy for anyone, but it was especially unhealthy for me, and my health issues. Since starting this blog, in Jan-2010, I have lost 40lbs! I'm a new, slimmer, and healthier me! Before losing weight, I was told I needed knee replacements. Losing weight was the ONLY tool I had to help me hold off on that life changing surgery. Since losing 40lbs, my knees have never felt better! My husband and I are also trying to start a family, but my PCOS was not going to make it as easy as 1,2,3, as I didn't have periods on my own. My doctor had told me if I wanted a baby, I HAD to lose weight. Since losing 40lbs, I've had regular cycles for the first time in my life! Which is very important when trying to have a baby ;) This journey of mine is more than me simply wanting to wear skinny jeans. It has been a quest to becoming :Deliciously Healthy, so ALL of my dreams can come true! I'm almost half way there! With each new day, I get closer and closer to my goal of 120lbs, and becoming :Deliciously Healthy!

Fall is in the air- :DH Pumpkin Chocolate Chip Donuts

I'm starting to feel the crispness of fall in the air. The leaves haven't begun to change, but I know it's just around the corner. And I'm all excited about it.

Today I wanted to put out the welcome matt, for fall to arrive.
There's no better way to do that, then to fill your house with the aroma of pumpkin. So, I baked these,
Chocolate Chip Pumpkin Donuts.
Using this donut mold I bought at Micheal's. With a 40% off coupon. Double score.
Fried donuts are so last year.

What you need:
  • 1 cup canned pumpkin
  • 1/2 cup, plus 2tbs packed brown sugar
  • 1/2 cup low fat buttermilk
  • 1 egg white
  • 1 tbs melted smart balance spread
  • 1 tsp vanilla extract
  • 1/2 cup unbleached all purpose flour
  • 1/2 cup whole-wheat pastry flour (or whole-wheat flour)
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp pumpkin pie spice
  • 1 tsp salt
  • 3 tbs dark chocolate chips, plus more to top donuts with
  • 1/4 cup powder sugar for dusting.
  • Cooking spray
What you do:
  • Preheat oven to 350
  • Spray donut molds with cooking spray.
  • Combine first 6 ingredients in a large bowl.
  • Mix together dry ingredients. Add dry ingredients to the wet ingredients and mix well.
  • stir in chocolate chips.
  • Pour batter into a pipping bag, or a large ziplock bag, and cut off the tip of the bag. Squeeze mixture into molds.
  • Bake for 20 minutes, or until toothpick comes out clean.
  • Cool on a cooling rack, and lightly dust with powdered sugar.
I was too lazy to tally up the calories. I blame the weather ;) But hey, they're baked, not fried, so you really can't go wrong. You can also make mini donuts, which was what I intended to do, but I could only find the full sized donut mold.

i was eyeing this donut mold at the grocery store yesterday and decided against it. i've been craving donuts ever since.

i have NEVER had a donut craving.

Wow! I am sooo writing this recipe down...because I feel the fall coming too! I LOVE fall and I am so glad for the cooler weather! I am seeing the different colors of the trees, I live in the country so you can't help but notice :-)
