Day two was a success!
I've been so emotional all day. I seriously broke down crying for no reason at all, at least twice today. Oh the joys of being a women. The good news is, I didn't have the urge to turn to food. I just kept telling myself, "Eating a hamburger is just going to create more problems, then it would solve." Now if only I could have been telling myself that for the last two weeks... but whatever :)
Lately I've been experimenting with spaghetti squash. I like it, but I can't seem to make it right... it keeps coming out slightly crunchy. Tonight I decided to experiment with it some more. I made chicken with marinara sauce, on top of spaghetti squash, and veggies.
It was quite yummy. and slightly crunchy :)
Onto tomorrow!
Have you ever made spaghetti squash?
Does yours come out crunchy?

If it comes out crunchy, you just need to cook it a little bit longer. I cut mine in 1/2, but if face down (so the shell is on top) in a caserole dish. Put about a 1/2 inch of water in the bottom, cover with tinfoil, and bake it for about 35 min at about 350. Comes out perfect! If it's too squishy, shorten the time, or too crunchy, more time. :) That my trick anyway
The first couple of times I made it, mine was too crunchy. Of course, I was making it in the micro. Changed to the oven and cooked it about 40 mins and it was much better. Still not my favorite thing.
I can never seem to make it right either. Hmm...I think I've just given up on the idea :/ Brittany, I'm glad that you're aware that unhealthy food won't heal and hurt or fix and emotion. I, too, am learning this. Great job!
I'm so proud of you for not turning to food for comfort. Talking yourself out of it is huge.
I agree with the people above - try baking the squash instead of doing it in the micro - better results.
Hooray! You're back!! I am on day 21 of the 17DD and as you know, the first days are the hardest! You can do it!!! I have made spaghetti squash in the past and I just can't get into to it. The texture is not my fave. However, I LIVE off of cauliflower rice and cauliflower mashed potatoes to calm my carb cravings!
You just need to cook or bake the spaghetti squash longer. I have never had crunchy spaghetti squash but it takes almost an hour in the oven and 40 min on the stove or so. Good Luck!
I don't like spag squash at all. I looooove butternut though! Roasted butternut is almost like candy to me. LOL
That looks amazing Brittany! I have recently discovered the wonders of squash! Butternut squash ravioli anyone?
YUM-O your food experiments look divinely delicious and healthy!

I just read your about Brittany section which is really inspiring to hear that...and through all of your setbacks you're coming out on top! :) For women I've read that when estrogen levels drop - serotonin levels also drop (serotonin makes you feel good) - resulting in women randomly crying. Bananas can be a solution to this as they increase serotonin levels!
You don't know me, but you remind me so much of me! I feel your pain sister!
When I do spaghetti squash, I poke it a lot of times with a knife, maybe five times? Only on the top and the sides. I stick it on a cookie sheet, and then bake it for an hour at 375. The shell gets nice and brown, so don't let that worry you (not that you would worry about that....) and it tastes so good as the noodles in spaghetti! You are awesome by the way. you really are!
I have the firm belief that there is only one healthy way to lose weight. And that is cardio exercises. If your thing is to sit back and eat Cheetos then you will certainly never lose weight. If you want to be healthy, you must want to work out. Make exercising fun and you will want to do it. Cardio exercises is what is working best for me.
