My Name is Brittany, and I'm 23yrs old. I was diagnosed with Lupus when I was 15, and then diagnosed with RA, when I was 18. I also got married when I was 18, and I'm enjoying my happily ever after with my hubby! When I got married, I was slim and trim...But not for long. After getting married, I started to gain a LOT of weight! In 1yr, I gained 50lbs! Finally, I went to the Doctor, where I discovered I have low thyroid. After being put on medicine, my weight gain slowed down, although over the next 3yrs, I gained an additional 26lbs. When I was 20yrs old, I got yet another diagnoses of Poly Cystic Ovarian Syndrome. That's 4 diagnoses in a 5yr period, if you lost count. They all effect my weight, in one way or another. Add on top of that, my love affair with food, and every 1 of those 76lbs gained was accounted for. Being 76lbs over weight is unhealthy for anyone, but it was especially unhealthy for me, and my health issues. Since starting this blog, in Jan-2010, I have lost 40lbs! I'm a new, slimmer, and healthier me! Before losing weight, I was told I needed knee replacements. Losing weight was the ONLY tool I had to help me hold off on that life changing surgery. Since losing 40lbs, my knees have never felt better! My husband and I are also trying to start a family, but my PCOS was not going to make it as easy as 1,2,3, as I didn't have periods on my own. My doctor had told me if I wanted a baby, I HAD to lose weight. Since losing 40lbs, I've had regular cycles for the first time in my life! Which is very important when trying to have a baby ;) This journey of mine is more than me simply wanting to wear skinny jeans. It has been a quest to becoming :Deliciously Healthy, so ALL of my dreams can come true! I'm almost half way there! With each new day, I get closer and closer to my goal of 120lbs, and becoming :Deliciously Healthy!

Fall & Glazed Donut Muffins

I always feel like fall doesn't last long enough, so as soon as we had one rainy cold day, I decided fall had begun. This year I'm diving right in, so I can enjoy every last drop of the fall season! 
The beginnings of fall:
*Starbucks low-fat hot chocolate while grocery shopping.
*Brown leather wedges, and pumpkin cardigans.
*Clinique's plum lipstick/lip gloss
*Cinnamon and nutmeg glazed donut muffins
I love everything about fall: the taste, the fashion, and the crisp fall scents. But I think the taste of fall is definitely my favorite ;)

These donut muffins are perfect for the mood I'm in. They don't scream fall, but there's a little hint of it in there. They're spiced with cinnamon and nutmeg, and are the perfect morning treat.

Glazed Donut Muffins

What you need:
  • 1 cup organic all purpose flour
  • 1 cup whole wheat pastry flour
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 3/4 teaspoon ground nutmeg
  • 1 teaspoon cinnamon
  • 3/4 teaspoon salt
  • 1 egg
  • 1/2 low fat vanilla yogurt
  • 1 cup low fat milk
  • 1/4 cup canola oil
  • 1 teaspoon vanilla extract
For the glaze: 
  • 1 cup confectioners' sugar
  • 3 tablespoons hot water
  • 3/4 teaspoon vanilla extract

What you're gonna do:

Preheat oven to 350 degrees. Line 12 muffin cups with muffin liners or spray with nonstick cooking spray. In a bowl, mix all of the ingredients together thoroughly, being careful to not over stir. Divide batter equally among prepared muffin cups. Bake until muffin tops are a pale golden, about 13 to 16 minutes, rotating halfway through baking time. Transfer muffins to wire rack and cool muffins for 10-15 minutes before glazing.
To make the glaze, In a medium bowl mix together confectioners’ sugar, vanilla and water. Whisk until smooth. When muffins have cooled, dip the muffin crown into the glaze and allow the glaze to harden. Once hardened, dip a second time and allow to harden before serving. 

Here's what I'm thinkin':
  • Makes 12 muffins
  • Serving size- 1 muffin
  • 144 calories per serving

Those wedges are gorgeous. I have seen the glazed donut muffins all over pinterest, but have been a chicken to try them because some people mentioned they fall apart. Looks like yours turned out perfect though. I will definitely give the recipe you used a try! Hope you are having a great day! xo

Erica- I saw them on pinterest too, but I changed the recipe quite a bit to make them healthier (took out some of the oils, butter, and 1 egg;). Hope you like the :Deliciously Healthy version!
